Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and chopped apples
  • 1 cup chopped pecans
  • ½ cup buttermilk

For the Caramel Glaze

  • ½ cup unsalted butter
  • 1 cup packed brown sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  • In a bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
  • In a large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Fold in chopped apples and pecans.
  • Pour the batter into the prepared baking pan and bake for 40-45 minutes or until a toothpick comes out clean.
  • For the caramel glaze, melt butter in a saucepan over medium heat. Add brown sugar and cream, whisking until smooth. Bring to a boil, reduce heat, and simmer for 2 minutes. Remove from heat and stir in vanilla extract.
  • Pour the warm caramel glaze over the hot cake. Let the cake cool before serving.

Notes

  • Use a mix of sweet and tart apples for added flavor.
  • Make sure to cool the cake slightly before adding the caramel glaze to prevent it from soaking in too much.
  • Store any leftovers in an airtight container at room temperature for up to 3 days.
