  • 1 small onion, diced
  • 2 cups shredded cheddar cheese (divided)
  • 10 small flour tortillas
  • 1 can (10 oz) red enchilada sauce
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef and onion over medium heat until browned. Drain excess fat.
  • Stir in chili powder, garlic powder, salt, and pepper. Mix well and remove from heat.
  • Spread a thin layer of enchilada sauce on the bottom of a 9x13-inch baking dish.
  • Fill each tortilla with beef mixture and a sprinkle of cheese. Roll tightly and place seam-side down in the dish.
  • Pour remaining enchilada sauce over the rolled tortillas and top with remaining cheese.
  • Bake uncovered for 20 minutes, or until cheese is melted and bubbly.
