Ingredients

  • 400g spaghetti or pasta of choice
  • 2 large chicken breasts, diced
  • 6 strips of bacon, chopped
  • 4 large eggs
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Olive oil, for cooking

Instructions

  • Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
  • In a large pan, heat a drizzle of olive oil over medium heat. Cook the bacon until crispy. Remove and set aside.
  • In the same pan, add diced chicken and season with salt and pepper. Cook until golden brown and fully cooked.
  • Add minced garlic to the pan and sauté until fragrant, about 30 seconds.
  • In a bowl, whisk together eggs and grated Parmesan. Gradually add reserved pasta water to temper the eggs, mixing continuously.
  • Combine the cooked pasta, chicken, and bacon in the pan. Remove from heat and pour in the egg mixture, tossing quickly to coat. The residual heat will cook the eggs into a creamy sauce.
  • Season with more salt and pepper as needed. Garnish with fresh parsley and additional Parmesan before serving.
