  • 1 lb smoked sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp Cajun seasoning
  • ½ tsp paprika
  • ½ tsp dried thyme
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same skillet, sauté onion, bell pepper, and garlic until softened.
  3. Stir in rice, diced tomatoes, chicken broth, and seasonings. Bring to a boil.
  4. Reduce heat, cover, and simmer for 15–20 minutes, or until rice is tender.
  5. Return the sausage to the skillet, stir, and cook for an additional 5 minutes.
  6. Garnish with green onions and serve warm.
