1 lb bacon, cooked and crumbled
1 medium onion, diced
6 large eggs
2 cups shredded cheddar cheese
1 1/2 cups shredded Swiss cheese
4 cups frozen hash browns, thawed
1 1/4 cups cottage cheese
Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a skillet, cook the bacon until crispy. Remove and crumble. In the same skillet, sauté diced onions until tender.
In a large mixing bowl, whisk eggs, then stir in cheddar cheese, Swiss cheese, cottage cheese, and thawed hash browns.
