  • 2 cups cooked chicken (shredded or diced)
  • 1 cup uncooked long-grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 cup frozen peas (optional)
  • 1/4 cup diced onion
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter or olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch casserole dish.
  2. In a large bowl, mix rice, cream of chicken soup, chicken broth, milk, garlic powder, salt, and pepper.
  3. Spread the uncooked rice mixture evenly into the prepared casserole dish.
  4. Layer the cooked chicken on top of the rice mixture.
  5. Cover the dish tightly with foil and bake for 45 minutes.
  6. Remove from the oven, stir lightly, and sprinkle cheese on top. Add peas if using.
  7. Bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Let it rest for 5 minutes before serving.
