Cheesy Taco Casserole is a mouth-watering, family-friendly dish featuring layers of seasoned ground beef, melted cheese, and crispy tortilla chips. Perfect for a quick, comforting dinner with a Mexican twist.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup diced tomatoes (canned or fresh)
  • 1 can black beans (optional)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 2 cups tortilla chips, crushed
  • 1 cup sour cream
  • 1 small onion, diced
  • 1/2 cup salsa
  • 1 cup corn (canned or frozen)
  • Optional toppings: sliced jalapeños, olives, avocado, cilantro

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef and diced onion until beef is browned. Drain excess fat.
  • Stir in taco seasoning, diced tomatoes, black beans, and corn. Cook for another 3 minutes.
  • In a baking dish, layer half the crushed tortilla chips. Add the beef mixture on top, followed by a layer of cheese.
  • Repeat the layers, finishing with a generous amount of cheese on top.
  • Bake for 15-20 minutes or until the cheese is bubbly and golden.
  • Let cool slightly before serving. Top with sour cream, salsa, and optional toppings.

Notes

  • You can swap ground beef for ground turkey or chicken.
  • Add jalapeños or hot sauce for extra spice.
