1 lb fresh salmon, cooked and flaked
1/2 cup finely chopped celery
1/4 cup finely chopped green onions
1/4 cup mayonnaise
1 large egg
1 tbsp Dijon mustard
1 tsp lemon juice
1/2 cup panko breadcrumbs
Salt and pepper to taste
2 tbsp olive oil (for frying)
In a large bowl, combine flaked salmon, celery, green onions, mayonnaise, egg, mustard, lemon juice, and breadcrumbs.
Season with salt and pepper. Mix until just combined.
Shape the mixture into small patties.
Heat olive oil in a skillet over medium heat.
Cook the salmon cakes for 3-4 minutes on each side, or until golden brown and cooked through.
