Ingredients

  • 2 slices of bread (your choice)
  • 1 cup cooked chicken, shredded or sliced
  • 1 avocado, mashed
  • 2 slices of cheese (cheddar, provolone, or Swiss)
  • 2 slices of tomato
  • 1 tablespoon mayonnaise (optional)
  • 1 tablespoon butter
  • Salt and pepper, to taste

Instructions

  • Preheat a skillet over medium heat.
  • Spread mashed avocado on one slice of bread and mayonnaise on the other (if using).
  • Layer the chicken, cheese, and tomato on top of the avocado. Sprinkle with salt and pepper.
  • Close the sandwich with the other slice of bread.
  • Butter the outside of both bread slices.
  • Place the sandwich in the preheated skillet and cook until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
