For the Pork Chops:

  • 4 bone-in pork chops
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup buttermilk
  • 1 egg
  • Vegetable oil for frying

For the Bacon Gravy:

  • 4 slices bacon, chopped
  • 2 tablespoons bacon grease
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • Salt and black pepper, to taste

Instructions

  • Prepare the Pork Chops: Pat pork chops dry. In a shallow dish, mix flour, salt, pepper, paprika, garlic powder, and onion powder.
  • In another dish, whisk buttermilk and egg.
  • Dip each pork chop in the buttermilk mixture, then dredge in the flour mixture.
  • Heat vegetable oil in a skillet over medium heat. Fry pork chops for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
  • Make the Bacon Gravy: In the same skillet, cook chopped bacon until crispy. Remove bacon, leaving 2 tablespoons of grease.
  • Stir in flour and cook for 1 minute. Slowly whisk in milk, stirring until thickened. Season with salt and pepper.
  • Stir in crispy bacon and serve the gravy over the pork chops.

  • Use a meat thermometer to ensure pork chops reach 145°F.
