For the Pork Chops:
4 bone-in pork chops
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
1 cup buttermilk
1 egg
Vegetable oil for frying
For the Bacon Gravy:
4 slices bacon, chopped
2 tablespoons bacon grease
2 tablespoons all-purpose flour
1 ½ cups milk
Salt and black pepper, to taste
Instructions
Prepare the Pork Chops: Pat pork chops dry. In a shallow dish, mix flour, salt, pepper, paprika, garlic powder, and onion powder.
In another dish, whisk buttermilk and egg.
Dip each pork chop in the buttermilk mixture, then dredge in the flour mixture.
Heat vegetable oil in a skillet over medium heat. Fry pork chops for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
Make the Bacon Gravy: In the same skillet, cook chopped bacon until crispy. Remove bacon, leaving 2 tablespoons of grease.
Stir in flour and cook for 1 minute. Slowly whisk in milk, stirring until thickened. Season with salt and pepper.
Stir in crispy bacon and serve the gravy over the pork chops.
