  • 2 lbs ground beef
  • 1 small onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1 cup crushed Ritz crackers
  • 2 large eggs
  • 3/4 cup whole milk
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup ketchup (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • 1 tsp yellow mustard (for glaze)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, mix ground beef, onion, green bell pepper, Ritz crackers, eggs, milk, salt, and pepper until well combined.
  • Shape mixture into a loaf and place in a greased loaf pan or baking dish.
  • In a small bowl, combine ketchup, brown sugar, and mustard to make the glaze. Spread half over the meatloaf.
  • Bake for 45 minutes, then spread the remaining glaze over the top. Bake for an additional 15 minutes.
  • Let rest for 10 minutes before slicing and serving.
