  • 2 salmon fillets
  • 8 oz pasta (linguine, fettuccine, or penne)
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup cherry tomatoes, halved
  • 1 cup spinach (optional)
  • ½ tsp paprika
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • ½ cup chicken or vegetable broth
  • 1 tbsp lemon juice
  • Fresh parsley, for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season the salmon fillets with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Cook the salmon for 3-4 minutes per side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, melt butter and sauté garlic until fragrant. Add cherry tomatoes and cook for 2 minutes.
  5. Pour in heavy cream, broth, paprika, and red pepper flakes. Simmer for 2-3 minutes.
  6. Stir in Parmesan cheese, lemon juice, and spinach. Cook until the sauce thickens.
  7. Flake the salmon into chunks and add it to the sauce. Toss in the cooked pasta and mix well.
  8. Garnish with fresh parsley and serve warm.
