  • 12 oz spaghetti or fettuccine
  • 2 chicken breasts, sliced
  • 4 slices of bacon, chopped
  • 3 large egg yolks
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a skillet over medium heat. Cook chicken slices until golden and cooked through. Set aside.
  3. In the same skillet, cook bacon until crispy. Remove and drain excess fat.
  4. In a bowl, whisk together egg yolks, heavy cream, and Parmesan cheese.
  5. Add minced garlic to the skillet and cook until fragrant, about 1 minute.
  6. Lower heat and return the chicken and bacon to the skillet. Add the cooked pasta.
  7. Remove skillet from heat and quickly toss in the egg yolk mixture. Use reserved pasta water to thin the sauce, if needed.
  8. Season with salt and black pepper. Garnish with parsley and serve warm.

  • For added flavor, use pancetta instead of bacon.
