  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese

  • ½ cup sun-dried tomatoes (drained and chopped)
  • 2 cups fresh spinach
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 2 tbsp butter

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning.
  • Cook chicken breasts until golden brown on both sides and cooked through, about 5-7 minutes per side. Remove and set aside.
  • In the same skillet, melt butter and sauté garlic until fragrant.
  • Add chicken broth, heavy cream, and Parmesan cheese. Stir until the sauce thickens slightly.
  • Stir in sun-dried tomatoes and spinach, cooking until spinach wilts.
  • Return chicken to the skillet and spoon sauce over the top. Simmer for a few minutes until heated through.
  • Serve with extra sauce drizzled on top.

  • For a lower-carb option, serve over cauliflower rice or zucchini noodles.
