    • 1 ½ cups graham cracker crumbs
    • ¼ cup granulated sugar
    • 6 tbsp unsalted butter, melted
  • Cheesecake Filling:

    • 24 oz cream cheese, softened
    • 1 cup granulated sugar
    • 3 large eggs
    • 1 tsp vanilla extract
    • 1 cup heavy cream
  • Topping:

    • ¼ cup granulated sugar (for caramelizing)

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the pan's bottom and bake for 10 minutes. Let cool.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and heavy cream until combined.
  4. Pour batter over the crust and bake for 50–55 minutes until the center is slightly set. Cool at room temperature, then refrigerate for at least 4 hours.
  5. Before serving, sprinkle sugar evenly on top and caramelize with a kitchen torch until golden brown. Let sit for a few minutes before slicing.
