2 boneless, skinless chicken breasts
2 cups heavy cream
2 cups chicken broth
1 can diced tomatoes (14.5 oz)
3 cloves garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon paprika
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
8 oz penne pasta
1 cup shredded Parmesan cheese
1 cup bell peppers, sliced (red and green)
½ cup onion, diced
2 tablespoons butter
1 tablespoon cornstarch (optional, for thickening)
Fresh parsley for garnish
Instructions
Place chicken breasts in the crock pot.
Add heavy cream, chicken broth, diced tomatoes, garlic, Cajun seasoning, paprika, onion powder, salt, and black pepper. Stir to combine.
Cover and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender.
Remove chicken, shred or slice, and return to the crock pot.
Add pasta, bell peppers, and onions. Stir and cook for an additional 30-40 minutes on high, until pasta is tender.
Stir in butter and Parmesan cheese. If needed, mix cornstarch with a little water and add to thicken.
Garnish with fresh parsley and serve hot.
Notes
Adjust Cajun seasoning to your spice preference.
Use any pasta shape you like.
For extra creaminess, add more Parmesan or cream cheese.
