This Crock Pot Creamy Cajun Chicken Pasta is a flavorful and comforting dish made with tender chicken, Cajun spices, creamy sauce, and pasta. Slow-cooked to perfection, this easy one-pot meal is perfect for busy weeknights.

  • 2 boneless, skinless chicken breasts
  • 2 cups heavy cream
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 oz penne pasta
  • 1 cup shredded Parmesan cheese
  • 1 cup bell peppers, sliced (red and green)
  • ½ cup onion, diced
  • 2 tablespoons butter
  • 1 tablespoon cornstarch (optional, for thickening)
  • Fresh parsley for garnish

Instructions

  • Place chicken breasts in the crock pot.
  • Add heavy cream, chicken broth, diced tomatoes, garlic, Cajun seasoning, paprika, onion powder, salt, and black pepper. Stir to combine.
  • Cover and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender.
  • Remove chicken, shred or slice, and return to the crock pot.
  • Add pasta, bell peppers, and onions. Stir and cook for an additional 30-40 minutes on high, until pasta is tender.
  • Stir in butter and Parmesan cheese. If needed, mix cornstarch with a little water and add to thicken.
  • Garnish with fresh parsley and serve hot.

Notes

  • Adjust Cajun seasoning to your spice preference.
  • Use any pasta shape you like.
  • For extra creaminess, add more Parmesan or cream cheese.
