1 lb boneless, skinless chicken breasts
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 cup heavy cream
1 cup grated Parmesan cheese
1 small onion, chopped
3 cloves garlic, minced
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
1 cup pasta (small shapes like rotini or shells)
2 tbsp tomato paste
1 tbsp olive oil
¼ tsp red pepper flakes (optional)
Fresh basil for garnish
Instructions
Add chicken, broth, diced tomatoes, onion, garlic, tomato paste, Italian seasoning, salt, pepper, and red pepper flakes to the crock pot.
Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
Shred the chicken with two forks, then stir in the heavy cream and Parmesan cheese.
Add the pasta and continue cooking for another 20-30 minutes until pasta is tender.
