  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt (or to taste)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 package (16 oz) refrigerated biscuit dough

Instructions

  • Place chicken, chicken broth, diced onion, garlic powder, onion powder, thyme, salt, and pepper into the crockpot.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and fully cooked.
  • Shred the chicken using two forks directly in the crockpot.
  • Add cream of chicken soup, heavy cream, and mixed vegetables. Stir to combine.
  • Cut the refrigerated biscuit dough into small pieces and place them on top of the chicken mixture.
  • Cover and cook on high for an additional 1-2 hours, or until the biscuit dough is fully cooked and fluffy.
