  • 1 lb Italian sausage (mild or spicy)
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups crushed tomatoes
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 3 cups fresh or frozen cheese tortellini
  • 3 cups fresh spinach, roughly chopped
  • Salt and pepper, to taste

Instructions

  • Brown the sausage in a skillet over medium heat. Drain excess grease and transfer to a crockpot.
  • Add diced onion, minced garlic, chicken broth, crushed tomatoes, Italian seasoning, and red pepper flakes to the crockpot. Stir well.
  • Cook on low for 6-7 hours or on high for 3-4 hours.
  • Stir in heavy cream and tortellini 30 minutes before serving.
  • Add spinach 10 minutes before serving. Let it wilt.
  • Season with salt and pepper to taste, then serve hot.

Notes

  • For extra flavor, substitute spicy sausage for mild sausage.
  • You can use frozen tortellini directly in the soup; no need to thaw beforehand.
