  • 4 salmon fillets, skinless

  • 2 cups fresh spinach, chopped

  • 1/2 cup cream cheese, softened

  • 1/4 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • Optional: Lemon wedges for serving

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a skillet over medium heat, sauté garlic in olive oil for 1 minute.

  3. Add spinach and cook until wilted.

  4. In a bowl, mix spinach, cream cheese, and Parmesan until smooth.

  5. Cut a slit into the side of each salmon fillet to create a pocket.

  6. Fill each pocket with the spinach mixture.

  7. Place fillets on a baking sheet, season with salt and pepper.

  8. Bake for 18–20 minutes until the salmon is cooked through.

  9. Serve with lemon wedges, if desired.

Notes

  • You can substitute cream cheese with ricotta for a lighter filling.

  • This recipe is also great cooked in an air fryer at 375°F for 12–15 minutes.
