This Easy Beef Stroganoff recipe features tender beef, savory mushrooms, and a creamy sauce, making it a comforting and flavorful dinner option.

  • 1 lb beef sirloin or tenderloin, sliced thinly
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tsp Dijon mustard
  • 1 tbsp all-purpose flour (optional, for thickening)
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish
  • 8 oz egg noodles or pasta of choice

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add sliced beef, season with salt and pepper, and sear until browned. Remove and set aside.
  • Reduce heat to medium, melt butter in the skillet, and sauté onions until soft. Add mushrooms and garlic, cooking until tender.
  • Stir in flour (if using) and cook for 1 minute. Gradually add beef broth, stirring constantly, and bring to a simmer.
  • Mix in sour cream and Dijon mustard, then return the beef to the skillet. Simmer on low heat for 5-7 minutes, until sauce thickens slightly.
  • Cook egg noodles according to package instructions. Serve beef stroganoff over the noodles, garnished with fresh parsley.

Notes

  • Substitute Greek yogurt for sour cream if desired.
  • For a gluten-free version, use cornstarch instead of flour and serve with gluten-free noodles.
