  • 1 lb large shrimp, peeled and deveined

  • 1/2 cup buttermilk

  • 1/2 cup cornstarch

  • 1/2 cup all-purpose flour

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • Oil for frying

For Firecracker Sauce:

  • 1/3 cup mayonnaise

  • 2 tbsp sweet chili sauce

  • 1 tbsp hot sauce (like Sriracha)

  • 1 tbsp honey

  • 1 tsp rice vinegar

  1. In a bowl, mix shrimp with buttermilk. Set aside to marinate 10 minutes.

  2. In another bowl, mix flour, cornstarch, salt, and pepper.

  3. Dredge shrimp in flour mixture, coat evenly.

  4. Heat oil to 350°F (175°C). Fry shrimp in batches until golden and crisp, 2–3 minutes per batch. Drain on paper towels.

Notes

  • For extra heat, add more hot sauce or a pinch of cayenne to the sauce.

  • Can be served over rice or inside tacos for a fun twist.
