  • 4 chicken thighs
  • 2 cups carrots, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 cups potatoes, diced
  • 1 cup mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup white wine (optional)
  • 1 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a large oven-safe pan over medium heat.
  • Season chicken thighs with salt, pepper, and thyme, then sear until browned on both sides. Remove from pan.
  • In the same pan, sauté onions, garlic, carrots, and mushrooms until softened.
  • Add diced potatoes, chicken broth, and wine. Bring to a simmer.
  • Place the chicken back into the pan, cover, and transfer to the preheated oven.
  • Bake for 40-45 minutes or until the chicken is fully cooked and vegetables are tender.
  • Remove from oven, garnish as desired, and serve warm.

Notes

You can substitute white wine with more chicken broth. Add fresh herbs like rosemary for additional flavor.
