  • lbs boneless, skinless chicken breasts, cut into bite-sized pieces

  • Salt and pepper to taste

  • 2 teaspoons Italian seasoning

  • 3 tablespoons unsalted butter, divided

  • 4 garlic cloves, minced

  • 1 lb asparagus, trimmed and cut into 2-inch pieces

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice (optional)

  • Fresh chopped parsley (for garnish)

Instructions

  • Season chicken with salt, pepper, and Italian seasoning.

  • In a large skillet, heat 1 tablespoon butter and olive oil over medium-high heat.

  • Add chicken in a single layer and sear for 3-4 minutes until golden brown. Flip and cook another 2-3 minutes until cooked through. Remove and set aside.

  • In the same skillet, add 1 tablespoon butter and garlic. Sauté for 30 seconds.

  • Add asparagus, season with salt and pepper, and cook for 4-5 minutes until tender-crisp.

  • Return chicken to skillet, add remaining butter and lemon juice. Toss to combine.

 

  • Garnish with parsley and serve hot.

  • Don’t overcrowd the pan when searing chicken – work in batches if needed.
