2 boneless, skinless chicken breasts, cut into bite-sized pieces
3 medium potatoes, diced
3 tbsp olive oil
4 cloves garlic, minced
½ cup grated Parmesan cheese
1 tsp dried oregano
1 tsp paprika
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional)
2 tbsp unsalted butter
2 tbsp fresh parsley, chopped
Instructions
Heat 2 tbsp olive oil in a large skillet over medium-high heat.
Add diced potatoes, season with salt, pepper, and paprika, and cook until golden brown and tender (about 10 minutes). Remove and set aside.
In the same skillet, add remaining 1 tbsp olive oil. Add chicken, season with oregano, salt, black pepper, and red pepper flakes, and cook until golden brown and fully cooked (about 7-8 minutes).
Reduce heat to medium-low, add butter and garlic, stirring for about 1 minute until fragrant.
Return potatoes to the skillet, sprinkle with Parmesan cheese, and toss everything together.
Cook for another 2-3 minutes until well combined.
Garnish with fresh parsley and serve warm.
Notes
Use baby potatoes for a creamier texture.
Add more red pepper flakes for extra spice.
