This Garlic Parmesan Chicken and Potatoes Skillet is a delicious one-pan meal featuring crispy, seasoned chicken and tender potatoes coated in a rich garlic butter and parmesan sauce. Perfect for a quick and satisfying dinner!

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 medium potatoes, diced
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped

Instructions

  • Heat 2 tbsp olive oil in a large skillet over medium-high heat.
  • Add diced potatoes, season with salt, pepper, and paprika, and cook until golden brown and tender (about 10 minutes). Remove and set aside.
  • In the same skillet, add remaining 1 tbsp olive oil. Add chicken, season with oregano, salt, black pepper, and red pepper flakes, and cook until golden brown and fully cooked (about 7-8 minutes).
  • Reduce heat to medium-low, add butter and garlic, stirring for about 1 minute until fragrant.
  • Return potatoes to the skillet, sprinkle with Parmesan cheese, and toss everything together.
  • Cook for another 2-3 minutes until well combined.
  • Garnish with fresh parsley and serve warm.

Notes

  • Use baby potatoes for a creamier texture.
  • Add more red pepper flakes for extra spice.
  • Serve with a side of steamed vegetables or a fresh salad.
