  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko or regular)
  • 2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • 2 tbsp olive oil or melted butter

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and black pepper.
  3. In a separate bowl, beat the eggs.
  4. Dip each chicken breast in the eggs, then coat evenly in the Parmesan-breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat and sear the chicken for 2–3 minutes on each side until golden brown.
  6. Transfer the chicken to the baking sheet and bake for 15–20 minutes, or until fully cooked and the internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before serving.

Notes

  • For extra crispiness, broil the chicken for the last 2 minutes of cooking.
  • Serve with a side of roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
