2 pounds red potatoes
6 slices bacon
1 small yellow onion, finely chopped
1/4 cup apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar
Salt and pepper to taste
1/4 cup chopped fresh parsley
Boil potatoes until tender, about 15 minutes. Drain, cool slightly, and slice.
Cook bacon in a skillet until crisp. Remove bacon and crumble.
In the bacon fat, sauté onion until soft.
