  • 1 small onion, finely chopped
  • 1 packet taco seasoning
  • 8 flour tortillas (8-inch)
  • 2 cups shredded Mexican cheese blend
  • 1 can (10 oz) red enchilada sauce
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 cup sour cream (optional, for serving)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef and onion over medium heat until beef is browned; drain excess grease.
  • Stir in taco seasoning and cook for an additional 1-2 minutes.
  • Spread 1/4 cup of enchilada sauce in the bottom of a greased 9x13-inch baking dish.
  • Spoon 2-3 tablespoons of the beef mixture into each tortilla, roll tightly, and place seam-side down in the dish.
  • Pour remaining enchilada sauce over the tortillas and sprinkle with shredded cheese.
