1 lb ground beef
1 small onion, finely chopped
1 packet taco seasoning
8 flour tortillas (8-inch)
2 cups shredded Mexican cheese blend
1 can (10 oz) red enchilada sauce
1/4 cup chopped fresh cilantro (optional)
1/4 cup sour cream (optional, for serving)
Instructions
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef and onion over medium heat until beef is browned; drain excess grease.
Stir in taco seasoning and cook for an additional 1-2 minutes.
Spread 1/4 cup of enchilada sauce in the bottom of a greased 9x13-inch baking dish.
Spoon 2-3 tablespoons of the beef mixture into each tortilla, roll tightly, and place seam-side down in the dish.
Pour remaining enchilada sauce over the tortillas and sprinkle with shredded cheese.
Bake uncovered for 20-25 minutes, or until cheese is melted and bubbly.
Garnish with fresh cilantro and serve with sour cream, if desired.
