This Hawaiian Chicken Salad combines tender chicken, juicy pineapple, crunchy nuts, and a creamy dressing for a refreshing and flavorful dish. Perfect for sandwiches, wraps, or serving over lettuce!

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup pineapple chunks (fresh or canned, drained)
  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • ¼ cup celery, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup macadamia nuts or almonds, chopped
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large bowl, combine shredded chicken, pineapple chunks, celery, red onion, and nuts.
  2. In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, salt, and black pepper.
  3. Pour the dressing over the chicken mixture and stir until well combined.
  4. Cover and refrigerate for at least 30 minutes before serving.
  5. Serve chilled on sandwiches, in wraps, or over lettuce.
