  • 1 tsp baking powder

  • ½ cup unsalted butter, softened
  • ¾ cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup diced fresh peaches

Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp honey

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and honey until creamy. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Gradually add dry ingredients and mix until combined. Fold in diced peaches.
  5. Fill cupcake liners ¾ full and bake for 18-20 minutes or until a toothpick comes out clean. Let cool.
  6. For frosting, beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and honey. Mix until fluffy.
  7. Frost cooled cupcakes and enjoy!
