  • 2 lbs beef stew meat (cubed)
  • 4 carrots (sliced)
  • 4 potatoes (cubed)
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Set the Instant Pot to sauté and heat olive oil. Brown the beef in batches, then set aside.
  • Add onions and garlic to the pot, sauté until soft. Stir in tomato paste.
  • Return beef to the pot. Add carrots, potatoes, beef broth, Worcestershire sauce, thyme, salt, and pepper.
  • Close the lid, set the valve to sealing, and pressure cook on high for 35 minutes.
  • Let the pressure release naturally for 10 minutes, then quick release.

  • For a thicker stew, mix 2 tbsp of cornstarch with water and stir into the stew after pressure cooking, then simmer until thickened.
