  • 2 pounds Yukon Gold potatoes, peeled and cubed

  • 4 large eggs

  • 1 cup mayonnaise

  • 1 tbsp yellow mustard

  • 1/2 cup chopped celery

  • 1/2 cup chopped red onion

  • 2 tbsp sweet pickle relish

  • 1 tbsp apple cider vinegar

  • Salt and pepper to taste

  • Chopped fresh parsley for garnish (optional)

Instructions

  • Add 1 cup of water to the Instant Pot. Place cubed potatoes in a steamer basket.

  • Place eggs on top of the potatoes.

  • Seal the lid, cook on High Pressure for 4 minutes.

  • Quick release pressure, remove eggs and potatoes.

  • Peel and chop eggs.

  • In a large bowl, combine mayo, mustard, relish, vinegar, salt, and pepper.

  • Add potatoes, chopped eggs, celery, and onion. Mix well.

 

  • Chill before serving, garnish with parsley if desired.

Notes

  • For tangier flavor, increase mustard or relish.

  • Best when chilled for at least 1 hour before serving.

 

  • Add bacon or dill for a twist.
