2 pounds Yukon Gold potatoes, peeled and cubed
4 large eggs
1 cup mayonnaise
1 tbsp yellow mustard
1/2 cup chopped celery
1/2 cup chopped red onion
2 tbsp sweet pickle relish
1 tbsp apple cider vinegar
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Add 1 cup of water to the Instant Pot. Place cubed potatoes in a steamer basket.
