Ingredients

  • 1 lb shrimp, peeled and deveined

  • 1 lb calamari, cleaned and sliced into rings

  • 1/2 lb scallops

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup celery, finely chopped

  • 1/4 cup red onion, finely sliced

  • 2 cloves garlic, minced

  • 1/3 cup extra virgin olive oil

  • 1/4 cup fresh lemon juice

  • 2 tbsp white wine vinegar

  • Salt and black pepper to taste

  • Red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil.

  2. Blanch shrimp for 2 minutes, calamari for 1 minute, and scallops for 1–2 minutes until just cooked. Drain and let cool.

  3. In a large bowl, combine seafood, celery, red onion, parsley, and garlic.

  4. In a separate bowl, whisk olive oil, lemon juice, vinegar, salt, pepper, and red pepper flakes.

  5. Pour dressing over seafood and toss gently to coat.

  6. Cover and refrigerate for at least 1 hour before serving.

Notes

  • Can be made a day in advance for deeper flavor.

  • Use the freshest seafood for best results.

  • Add chopped olives or capers for extra zest.
