1 lb shrimp, peeled and deveined
1 lb calamari, cleaned and sliced into rings
1/2 lb scallops
1/4 cup fresh parsley, chopped
1/4 cup celery, finely chopped
1/4 cup red onion, finely sliced
2 cloves garlic, minced
1/3 cup extra virgin olive oil
1/4 cup fresh lemon juice
2 tbsp white wine vinegar
Salt and black pepper to taste
Red pepper flakes (optional)
Bring a large pot of salted water to a boil.
Blanch shrimp for 2 minutes, calamari for 1 minute, and scallops for 1–2 minutes until just cooked. Drain and let cool.
In a large bowl, combine seafood, celery, red onion, parsley, and garlic.
In a separate bowl, whisk olive oil, lemon juice, vinegar, salt, pepper, and red pepper flakes.
Pour dressing over seafood and toss gently to coat.
Cover and refrigerate for at least 1 hour before serving.
