  • 1 lb carrots, peeled and sliced

  • 2 tbsp butter

  • 2 tbsp honey or brown sugar

  • 1 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • 1/4 tsp salt

  • Fresh parsley for garnish (optional)

Instructions

  • Boil carrots in salted water for 6–8 minutes, or until tender.

  • Drain and return carrots to the pan.

  • Add butter, honey (or brown sugar), lemon juice, lemon zest, and salt.

  • Cook over low heat, stirring, until carrots are well coated and glaze thickens.

 

  • Garnish with parsley if desired and serve warm.
