Ingredients

  • 1/2 cup granulated sugar

  • Zest of 1 lemon
  • 2 cups all-purpose flour

  • 1/2 cup lemon curd or lemon jam (for filling)

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, cream together the butter, sugar, and vanilla until light and fluffy.
  • Add lemon zest, mix, then gradually add flour and salt until combined.
  • Scoop out tablespoon-sized dough balls, roll, and place on the baking sheet.
  • Press a thumbprint in each cookie, then fill with lemon curd or jam.
  • Bake for 12-15 minutes, or until edges are slightly golden. Cool before serving.

Notes
