This loaded cauliflower casserole is a delicious low-carb alternative to traditional potato casseroles. Made with tender cauliflower, crispy bacon, gooey cheese, and a creamy sauce, it’s the perfect comfort food. Great for keto diets and easy to prepare, this dish is a crowd-pleaser!

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup cooked and crumbled bacon
  • ¼ cup chopped green onions
  • ¼ cup cream cheese, softened
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • Steam or boil cauliflower florets until tender, then drain well.
  • In a large bowl, mix sour cream, cream cheese, garlic powder, onion powder, salt, and pepper.
  • Add the cooked cauliflower, half of the cheese, and half of the bacon. Mix well.
  • Transfer mixture to the prepared baking dish and top with remaining cheese and bacon.
  • Bake for 20 minutes, or until cheese is melted and bubbly.
  • Garnish with chopped green onions before serving.
