Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 1 lb large shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup sundried tomatoes (chopped)
  • 1 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook pasta according to package instructions; drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add shrimp and season with salt and pepper. Cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
  • In the same skillet, sauté garlic until fragrant, about 1 minute.
  • Add heavy cream, sundried tomatoes, Parmesan cheese, and red pepper flakes. Stir and let simmer for 2-3 minutes until sauce thickens.
  • Return shrimp to the skillet and toss to coat in the sauce. Add cooked pasta and mix well.
  • Garnish with fresh parsley and serve immediately.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Adjust red pepper flakes based on your spice preference.
  • Fresh basil can also be used for garnish instead of parsley.
