8 oz pasta (spaghetti or fettuccine)
1 lb large shrimp (peeled and deveined)
2 tbsp olive oil
4 cloves garlic (minced)
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/3 cup sundried tomatoes (chopped)
1 tsp red pepper flakes
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Cook pasta according to package instructions; drain and set aside.
Heat olive oil in a large skillet over medium heat. Add shrimp and season with salt and pepper. Cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
In the same skillet, sauté garlic until fragrant, about 1 minute.
Add heavy cream, sundried tomatoes, Parmesan cheese, and red pepper flakes. Stir and let simmer for 2-3 minutes until sauce thickens.
Return shrimp to the skillet and toss to coat in the sauce. Add cooked pasta and mix well.
Garnish with fresh parsley and serve immediately.
Notes
For a lighter version, substitute heavy cream with half-and-half.
Adjust red pepper flakes based on your spice preference.
Fresh basil can also be used for garnish instead of parsley.
