Mushroom Asiago Chicken is a delectable dish featuring succulent chicken breasts smothered in a rich, savory mushroom and Asiago cheese sauce.   • 4 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms
  • 1 cup grated Asiago cheese
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add the sliced mushrooms and sauté until tender, about 5 minutes.
  4. Add minced garlic and thyme, cooking for an additional minute.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  6. Reduce heat to low, then add heavy cream and grated Asiago cheese, stirring until the sauce thickens and the cheese melts smoothly.
  7. Return the chicken to the skillet, coating it with the sauce, and simmer for 3-5 minutes.
  8. Garnish with fresh parsley and serve hot.

Notes

  • For extra flavor, deglaze the pan with a splash of white wine before adding the cream.
  • Asiago cheese can be substituted with Parmesan or Gruyère if preferred.
