Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 celery stalk, diced
  • 1 medium carrot, shredded
  • 3 cups cooked, shredded chicken
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup milk
  • 16 oz potato gnocchi
  • 2 cups fresh spinach, chopped
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion, garlic, celery, and carrot until softened.
  • Add shredded chicken, chicken broth, and thyme; bring to a simmer.
  • Stir in heavy cream and milk; heat until warmed.
  • Add gnocchi and cook for 3-4 minutes until tender.
  • Stir in spinach and let wilt. Season with salt and pepper to taste.
  • Serve warm and enjoy!

Notes

  • For a thicker soup, add 1-2 tbsp of cornstarch mixed with water.
  • Substitute kale for spinach if desired.
  • Use rotisserie chicken for convenience.
