2 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 celery stalk, diced
1 medium carrot, shredded
3 cups cooked, shredded chicken
4 cups chicken broth
2 cups heavy cream
1 cup milk
16 oz potato gnocchi
2 cups fresh spinach, chopped
1 tsp dried thyme
Salt and pepper, to taste
Instructions
Heat olive oil in a large pot over medium heat.
Sauté onion, garlic, celery, and carrot until softened.
Add shredded chicken, chicken broth, and thyme; bring to a simmer.
Stir in heavy cream and milk; heat until warmed.
Add gnocchi and cook for 3-4 minutes until tender.
Stir in spinach and let wilt. Season with salt and pepper to taste.
Serve warm and enjoy!
Notes
For a thicker soup, add 1-2 tbsp of cornstarch mixed with water.
