This One Pot Beef Taco Pasta recipe is a delicious, family-friendly meal combining ground beef, pasta, taco seasoning, and cheese in a single pot.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup tomato sauce
  • 2 cups uncooked pasta (penne or rotini)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup sour cream (optional)
  • Fresh cilantro or green onions for garnish

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add diced onion and garlic, sauté until softened.
  • Stir in taco seasoning, beef broth, diced tomatoes, and tomato sauce.
  • Add uncooked pasta and mix well. Bring to a boil, then reduce heat and simmer for 12-15 minutes, until pasta is tender.
  • Stir in shredded cheddar and mozzarella cheese until melted.
  • Remove from heat, mix in sour cream (if using), and garnish with cilantro or green onions.
  • Serve warm and enjoy!
