  • 1 lb boneless, skinless chicken breasts (cut into cubes)
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  • Heat olive oil in a large pot over medium-high heat. Add cubed chicken, season with salt and pepper, and cook until browned. Remove chicken and set aside.
  • In the same pot, add chopped onion and diced bell pepper. Sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 more minute.
  • Stir in orzo pasta, coating it in the vegetable mixture. Pour in chicken broth and diced tomatoes. Add dried oregano and thyme, and mix well.
  • Return the browned chicken to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 12-15 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
  • Remove from heat and let it sit for a few minutes before serving. Garnish with fresh parsley and Parmesan cheese, if desired.
