  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced

  • 1 teaspoon sugar
  • 4 cups vegetable broth (or beef broth for a richer flavor)
  • 2 cups water
  • 8 ounces fettuccine or spaghetti pasta
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded Gruyere cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat butter in a large pot over medium heat. Add onions, sugar, and thyme, and cook, stirring occasionally, for 25-30 minutes until deeply caramelized.
  • Stir in garlic and cook for 1 minute.
  • Pour in the vegetable broth and water. Bring to a boil.
  • Add the pasta and cook, stirring occasionally, until pasta is tender and liquid is mostly absorbed (about 10-12 minutes).
  • Stir in Parmesan and Gruyere cheeses until melted and creamy. Season with salt and pepper to taste.
  • Garnish with fresh parsley and serve hot.
