This One Pot Marry Me Chicken Pasta is a creamy, flavorful dish made with tender chicken, sun-dried tomatoes, parmesan, and a rich garlic cream sauce. It's a quick and easy dinner recipe that's perfect for busy weeknights or special occasions.

  • 2 boneless, skinless chicken breasts (cubed)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup sun-dried tomatoes (chopped)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 ½ cups uncooked penne pasta
  • ½ cup grated parmesan cheese
  • ½ cup baby spinach (optional)
  • 2 tbsp fresh basil (chopped)

Instructions

  • Heat olive oil in a large pot over medium heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until golden brown. Remove from the pot and set aside.
  • In the same pot, add garlic, red pepper flakes, and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  • Pour in chicken broth and heavy cream, then bring to a simmer. Add uncooked pasta and stir well.
  • Cover and cook for about 12-15 minutes, stirring occasionally, until the pasta is tender.
  • Return the cooked chicken to the pot and mix in parmesan cheese and spinach (if using). Simmer for another 2 minutes.
  • Garnish with fresh basil and serve warm.

  • Swap heavy cream with half-and-half for a lighter option.
