12 oz orecchiette pasta
1 lb Italian sausage (mild or spicy, casings removed)
3 cups fresh spinach, chopped
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tbsp olive oil
1/2 tsp red pepper flakes (optional)
Salt and pepper, to taste
Instructions
Cook the orecchiette pasta according to package instructions. Reserve 1/2 cup pasta water and drain the rest.
In a large skillet, heat olive oil over medium heat. Add sausage and cook, breaking it apart, until browned.
Stir in garlic and red pepper flakes, cooking for 1-2 minutes until fragrant.
Add spinach to the skillet and cook until wilted, about 2-3 minutes.
Combine cooked pasta with the sausage and spinach mixture. Stir in reserved pasta water as needed to loosen the sauce.
