  • 1/2 tsp red pepper flakes (optional)

Instructions

  • Cook the orecchiette pasta according to package instructions. Reserve 1/2 cup pasta water and drain the rest.
  • In a large skillet, heat olive oil over medium heat. Add sausage and cook, breaking it apart, until browned.
  • Stir in garlic and red pepper flakes, cooking for 1-2 minutes until fragrant.
  • Add spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Combine cooked pasta with the sausage and spinach mixture. Stir in reserved pasta water as needed to loosen the sauce.
