  • 1/2 cup unsalted butter, softened

  • 1/2 cup creamy peanut butter

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 1 large egg

  • 1/2 tsp vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup mini chocolate chips

  • Optional: chocolate pieces or mini peanut butter cups for topping

Instructions

  • Preheat oven to 350°F (175°C) and grease a mini muffin pan.

  • In a bowl, cream together butter, peanut butter, granulated sugar, and brown sugar.

  • Beat in egg and vanilla until smooth.

  • In another bowl, whisk flour, baking soda, and salt. Gradually mix into wet ingredients.

  • Fold in mini chocolate chips.

  • Scoop dough into muffin pan wells, filling each about 3/4 full.

  • Bake for 10–12 minutes until golden.

  • While still warm, press a chocolate piece or mini peanut butter cup into the center.

 

  • Let cool in pan 5 minutes, then transfer to a rack.

  • Use a cookie scoop for even portions.

  • For a gooey center, slightly underbake.
