  • 1 whole chicken (3.54 lbs), spatchcocked

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • 2 tbsp lime juice

  • 2 tbsp soy sauce

  • 1 tbsp white vinegar

  • 1 tbsp smoked paprika

  • 1 tbsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp dried oregano

  • 1 tsp black pepper

  • 1 tsp salt

  • 1 tsp sugar

  • Optional: Aji Verde sauce for serving

Instructions

  1. Prepare Marinade: In a bowl, whisk together olive oil, garlic, lime juice, soy sauce, vinegar, and all spices.

  2. Marinate Chicken: Rub marinade all over chicken, cover, and refrigerate for at least 4 hours or overnight.

  3. Preheat Grill: Heat grill to medium-high heat (about 375°F).

  4. Grill Chicken: Place chicken skin-side down and grill for 15 minutes. Flip and cook for another 25–30 minutes until internal temperature reaches 165°F.

  5. Rest and Serve: Let chicken rest for 10 minutes before carving. Serve with Aji Verde sauce.

Notes

  • Spatchcocking the chicken allows for even grilling.

  • Marinate overnight for maximum flavor.
