A delicious twist on the classic mimosa, Pineapple Upside Down Mimosas bring a tropical, fruity flair to your brunch table. Made with tangy pineapple juice, bubbly champagne, and a splash of grenadine, this easy cocktail delivers a stunning layered look and refreshing flavor. Perfect for holidays, celebrations, or a fun weekend treat!

Ingredients

Scale
  • 1 cup pineapple juice (chilled)

  • 1 bottle champagne or prosecco (chilled)

  • 2 tbsp grenadine

  • Maraschino cherries (for garnish)

  • Pineapple wedges (optional garnish)

Instructions

  • Pour about 2 oz of pineapple juice into each champagne flute.

  • Fill the rest of the glass with champagne or prosecco, leaving about ½ inch at the top.

  • Slowly pour grenadine down the inside edge of the glass — it will settle at the bottom for that "upside down" effect.

  • Garnish with a maraschino cherry and/or pineapple wedge.

  • Serve immediately and enjoy!

Notes

  • For a sweeter drink, use extra grenadine or pineapple juice.

  • To make it non-alcoholic, swap champagne for sparkling water or ginger ale.

  • Best served immediately for the layered look and bubbly texture.
