  • 2 boneless skinless chicken breasts

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 medium zucchini, sliced

  • 1 cup fresh (or frozen) sweet corn kernels

  • Salt and pepper to taste

  • 1 tsp Italian seasoning

  • 1 tbsp fresh parsley, chopped (for garnish)

  • Optional: red pepper flakes for a spicy kick


Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.

  2. In a large skillet over medium heat, heat olive oil and 1 tbsp of butter.

  3. Add chicken and sear for 4–5 minutes on each side until golden and cooked through. Remove and set aside.

  4. In the same pan, add remaining butter and garlic. Sauté for 30 seconds until fragrant.

  5. Add zucchini and corn. Cook for 4–5 minutes until tender.

  6. Return chicken to the skillet, spoon garlic butter and vegetables over the top.

  7. Garnish with parsley and optional red pepper flakes. Serve hot.

Notes

  • You can substitute chicken thighs for breasts if preferred.

  • Add a splash of lemon juice for extra brightness.

  • Frozen corn works well—just thaw and drain before use.

  • Leftovers keep well in the fridge for 2–3 days.
