For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

For the Royal Icing:

  • 3 cups powdered sugar
  • 2 tbsp meringue powder
  • 4-6 tbsp water
  • Gel food coloring (optional)

Instructions

  • Prepare the Cookies:
    • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Cream together butter and sugar until light and fluffy.
    • Mix in egg and vanilla extract until combined.
    • In a separate bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture.
    • Roll dough to ¼-inch thickness, cut into heart shapes, and place on prepared baking sheet.
    • Bake for 8-10 minutes or until edges are lightly golden. Cool completely.
  • Prepare the Royal Icing:
    • Beat powdered sugar, meringue powder, and 4 tbsp of water until smooth. Add more water, 1 tsp at a time, to reach desired consistency.
    • Divide icing into bowls and mix in gel food coloring if desired.
  • Decorate Cookies:
    • Transfer icing to piping bags and decorate cooled cookies. Let icing set completely before serving or storing.

Notes

  • For best results, chill cookie dough for 15-20 minutes before rolling to prevent spreading.
  • Store decorated cookies in an airtight container for up to 5 days.
  • Adjust icing consistency by adding small amounts of water or powdered sugar.
