For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 ½ cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
For the Royal Icing:
- 3 cups powdered sugar
- 2 tbsp meringue powder
- 4-6 tbsp water
- Gel food coloring (optional)
- Prepare the Cookies:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter and sugar until light and fluffy.
- Mix in egg and vanilla extract until combined.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture.
- Roll dough to ¼-inch thickness, cut into heart shapes, and place on prepared baking sheet.
- Bake for 8-10 minutes or until edges are lightly golden. Cool completely.
- Prepare the Royal Icing:
- Beat powdered sugar, meringue powder, and 4 tbsp of water until smooth. Add more water, 1 tsp at a time, to reach desired consistency.
- Divide icing into bowls and mix in gel food coloring if desired.
- Decorate Cookies:
- Transfer icing to piping bags and decorate cooled cookies. Let icing set completely before serving or storing.
