  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 2 tablespoons heavy cream
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons unsalted butter
  • Fresh parsley, for garnish

Instructions

  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden brown, about 5-6 minutes per side. Remove and set aside.
  • In the same skillet, add mushrooms and sauté until softened, about 5 minutes.
  • Add minced garlic and cook until fragrant, about 1 minute.
  • Pour in white wine and scrape the browned bits from the bottom of the pan. Let the wine reduce by half.
  • Add chicken broth and bring to a simmer. Return the chicken to the skillet.
  • Cook for 10-15 minutes, or until the chicken is cooked through.
  • Stir in heavy cream, fresh thyme, and butter. Allow the sauce to thicken.
  • Garnish with fresh parsley before serving.

Notes

  • For a non-alcoholic version, substitute the wine with extra chicken broth.
  • Serve with mashed potatoes, rice, or crusty bread to soak up the sauce.
