4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons olive oil
8 oz mushrooms, sliced
3 cloves garlic, minced
1 cup dry white wine
1 cup chicken broth
2 tablespoons heavy cream
1 tablespoon fresh thyme, chopped
2 tablespoons unsalted butter
Fresh parsley, for garnish
Instructions
Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden brown, about 5-6 minutes per side. Remove and set aside.
In the same skillet, add mushrooms and sauté until softened, about 5 minutes.
Add minced garlic and cook until fragrant, about 1 minute.
Pour in white wine and scrape the browned bits from the bottom of the pan. Let the wine reduce by half.
Add chicken broth and bring to a simmer. Return the chicken to the skillet.
Cook for 10-15 minutes, or until the chicken is cooked through.
Stir in heavy cream, fresh thyme, and butter. Allow the sauce to thicken.
Garnish with fresh parsley before serving.
Notes
For a non-alcoholic version, substitute the wine with extra chicken broth.
Serve with mashed potatoes, rice, or crusty bread to soak up the sauce.
